As far as getting a good night's sleep, your body will sleep when it requires sleep, so try not to think too much about it if you can't sleep during normal times!
You might want to try a dish of dried lavender next to your bed, or mix a few drops of lavender and peppermint essential oils with your finger, inhale, then massage into your temples, right behind your ear lobes, and on the right and left side of your hairline on your neck.
If you're truly desperate, you could use Rescue Remedy, but you would have to decide how strictly you want to follow your water fast, because it contains plant extracts and a small amount of alcohol.
