I think you're always going to put on some weight after the fast- just the act of ingesting some food will put weight on you.

I find I keep most of the weight off on a low fat raw vegan diet. I'm not eating lots of fats, so there's no fat for my body to store. After the fast I gain back a small amount of weight in the first couple of days, and then stabilise.
