The article said natural yeast will break down the gluten but it takes 12 hours for the bread to rise and Americans can't wait for a natural process that doesn't enhance taste or texture in any way. It said that in Europe natural yeast was the norm and many of the comments were from people who are gluten intolerant but had no problem eating bread while visiting Europe.
