Water Kefir

Hi!

I have a question about the use of water kefir.

Everyone knows that water kefir contains alot of good bacteria but this bacteria is in symbiosis with alot of yeasts.

I have made water kefir a few times and it seems to me that the yeast can quickly take over and produce alot of alcohol. So couldn't this also be true in the body? It seems to me that the lacto bacteria have a hard time controlling the yeasts and if fermented too long or if the outside temperature is to warm the yeast will take over.

Maybe fermented vegetables are alot safer because you can control the environment with sea salt which favor the good bacteria.

I'm asking this because I really need to repopulate my intestines but I don't wanna put something that can take over and produce alcohol in my body just like candida.

Do you have som knowledge about this?

Thank you.
