I've been doing this for about 8 months. I get enough protein from eating enough of the plant foods I eat. Rice alone will give you all the amino acids you need if you eat enough of it. Bananas too!
I'd make sure you're getting enough calories and temporarily omit all overt fats for a couple of weeks if fats like nuts are causing havoc for you like that.
I'd also not combine anything with fruit for awhile to optimize your digestion. Fruit with other fruit should be OK, but it's best to even eat each type of fruit by itself. Depends how your digestion is.
