Great to see that you are taking a realistic approach like this. The first rule of medicine is to do no harm and it seems like a lot of holistic practitioners forget about this. Fruits contain tons of nutrition that we need, yes they do feed candida and you don't need to eat tons of them. Eating 3 prunes as a snack will have little effect on feeding candida but is amazing for the digestive system, removing toxins from the body and will also uplift the body. In my current thinking, the best way to receive the maximum health benefits from carbohydrates is to eat them without combining them with heavy proteins or fats. In other words, eating a bowl of quinoa with lightly sauteed vegetables will give you the maximum benefit, whereas eating brown rice and chicken will not. I don't think there is anything wrong with mixing carbs and proteins and we can digest them okay but if you only eat carbs in combination with heavy proteins and fats, you will not feel healthy and will have Sugar cravings.
