Autolysis actually begins between 18-36 hours after your last meal during the transfer of glucose as fuel, to that of ketones. It takes up to 3 days before the body is providing all its needs from it's own stores, during which time the cleansing process of fasting is initiated (Autolysis), or the digestion of diseased damaged or aged cells.

If Autolysis only begins after 11 days of fasting, then the cleansing process would be delayed and we wouldn't experience symptoms and or the results of detox before that time.
