Hmm.. Perhaps fresh is fine too? There's a decent price on a half-kilo of it always at the grocery, and growth-hormone injections, Antibiotic use, etc, is a good bit strongly-regulated here. Simple fresh calf liver from cattle.

I just need to learn a recipie for soaking it in something other than milk. :)
