quality, including nutrient value, and freshness can be determined in other ways too...

How hard and thick the shell is

how well the egg stands/sets up - if the yolk and white spread out, or worse, the yolk breaks easily or without any effort at all and everything runs into everything else - you have very poor quality.

Butter... it is not hard to know whether food is good quality or not with a little research and common sense.
