"something wrong with the wheat in general"~ no doubt! Where does your wheat come from? Here in the U.S. it's all crap, as discussed in the book "Wheatbelly"', by Dr. William Davis.
I must say though, that that concept was first brought to us by our own brilliant CZ-er Grzbr.
I wish that we had good rye bread here. It's all "cut" with wheat. I could try one of the incredibly dense ones at the HFS, I suppose.
