Very valid reasoning about waiting for the tea to cool down before adding honey. As per that soft-fast regimen, it is best to wait until tea goes to body-temperature, then add the honey. Lately I am not even heating the water for certain "teas" - just soaking the powdered herb over few hours, mostly stems, flowers and leaves. If pouring boiling water on herbs, during fast, recommended soaking is 5-10 min, then strain.
The soft-fast I was referring to doesn't have the honey as being mandatory. The description is "add a tsp of honey, if desired". I concur that some people would tolerate less sugars overall, and, as with everything, honey use would be also subject to common sense and individual specifics.
