I think the problems with meat are in the protein and toxins, NOT the saturated fat. To me, saturated fat is good. I eat organic butter, and coconut oil, both of which are mostly saturated. I do eat some meat but it is small amounts and definitely not every day.
I think people are blaming the wrong thing when they point fingers at atkins or other high animal protein diets. It's the high protein and all those toxins stored in animals, not the saturated fat. (toxins in the fat, yes, but not the type of fat).
That being said, I think a meat eater who includes tons of fruits and vegetables (and possibly whole grains) can have a far healthier diet than a junk-food vegetarian who eats dairy products and refined carbohydrates all day long. For sure.
Step 1: Put lots of GOOD STUFF IN.
Step 2: When you get used to Step 1, then it's time for taking the BAD STUFF OUT. Wean yourself off of the worst things first, which in my list would be: soft drinks, artificial sweeteners, hydrogenated oils and vegetable oils, dairy products, soy, refined sugars and starches and flours, beef chicken seafood.
If you cut out the bad stuff first, but aren't accustomed to eating large portions of good stuff, you will have big problems!
