I agree that a lot of certain veggies can be irritating, and eating a ton of avocados would nutritionally be similar to drinking olive oil straight...but when you talk about not being able to tolerate starches. Is it because they just go rancid and cause all kinds of horrible symptoms? This was me when consuming meat. Horrible reactions to cucumbers and hommus etc. I was afraid to death of all the carbs and most veggies even. My 2 cents is that you really need to look at eating heavy protein as a cause for carbohydrate intolerance. It could be seriously screwing up the liver so bad that nothing digests right. And yes, maybe the starches give you an immediate reaction, but I am not going out on a limb saying that a long term atkins diet is going to cause problems for the liver and the whole system.
