Thanks - yes! I am familiar with the Mug Muffin - I had to stop eating them when I stopped using eggs. Yours sounds amazing. I used to use 2 T flax meal with 2 T almond flour/meal for a lighter mouthfeel. They're yummy with cinnamon and raisins too.. sigh.. I miss raisins.
Carob is alkalizing where cocoa is acidic; it also helps that carob is naturally sweet and therefore requires less sweetener. I was pretty surprised to see the pH difference, and I like that it's caffeine-free so it won't mess up my head, I feed it to my kids too. Try it - it's obviously NO substitute for cacao but it'll do in a pinch ;)
