Hey, here are some thoughts that popped up immediately in my mind:
First the need for you to liver flush, as improved bile flow will help with ANY and ALL of your possible ailments (and I think you have them all- parasites, candida, mercury, eradicated flora)
Your pancreas may also be blocked preventing adequate release of digestive enzymes. If you have a history of fast foods, fried foods, junk foods, etc, it is highly like your problems are caused by biliary obstruction.
Secondly, the possibility that you have toxins stored in your stomach that react with the foods that you eat and cause gas. Sometimes even foods that clean you out like fruits can react violently to these toxins and ferment/putrefy on the spot and release even more noxious byproducts. I highly recommend drinking Essiac
tea, the stronger and more natural the better.
I also thought that it would be very helpful for you to introduce a neutral grain such as quinoa or millet into your diet for stability... to be eaten alone and well chewed.
At this point you cannot eat much but I will say it right here that loads of meat regardless of the quality will contribute to liver stones
and unless you have a history of successful Liver Flushing
and know how your liver actually responds to animal cholesterol, it would be better to revert to less meat and more greens. It also sounds like the meat you are eating is putrefying therefore not digesting and just poisoning you. When I eliminated meat from my candida diet, the die off intensified 3 fold.
Of course be aware of food combining principles.
Try malic acid see if it flushes some sludge out.
