kefir is not getting that thick consistency...

on like my 7th batch. first few times i use homogenized on accident.

Now when i make it i tried 1 tbspn grains which are fully hydrated, 1 cup 1% pasturized organic non-homogenized milk.

It forms a thick cottage cheese layer up top, and a clear liquid on bottom. I strain it and it's mostly clear liquid, with a little bit of thick white cream. When I mix it all up it's not sour at all like store bout kefir. nor does it have that thick creamy consistency. Also the chunks are really thick cant even strain it all through my metal strainer. It looks nothing like the video I watched on youtube where he had thick stringy cream coming out of his strainer. Mine is really thick up top...

What am i doing wrong?

sitting in a glass jar, room temp, 24 hours.
