SCD vs GAPS vs Bee Wilder

I cannot decide which diet is most healing for pathogenic infections and gut issues:

-Specific Carbohydrate Diet SCD
-Bee Wilder

The are sort of similar, but SCD and Bee do not really recommend taking probitics.

Here are the differences relating to their views on probiotics:
-Bee deems probiotics as not too useful. She feels the body is smart enough to make it's own and that any probiotic supplement is simply digested and the bacteria killed. Everything else I've research touts how beneficial they are, especially in cases of major dysbiosis like me.
-SCD recommends only lactobacilli-types of bacteria (they feel other types will contribute to SIBO). They stress the use of 24hr fermented yogurt, but not kefir.
-GAPS says all fermented foods (kefir, yogurts, kraut, etc) and multi-strain probiotics are vital to restoring proper flora. What is the real concensus and why?

Bee's program is very strict on carbs (10% carbs, 75% fat, 15% protein).

GAPS and SCD have intro diets (soups and such) and phases that incorporate more foods as the gut heals. It seems like Bee's program is for life, whereas GAPS and SCD will eventually allow more variety as the gut heals (they are strict at first while healing occurs). However, all 3 prohibit grains (which I agree with... I do not tolerate grains. Going GF did not help my GI symptoms much and this is because it is the polysaccharide---not simply gluten---that causes the malabsorption, inflammation, mucus production, destruction of the GI tract, dysbiosis, etc).

Has anyone tried any of these? Any advice?
