Hi, processed pasta is not really a whole food ,,, :-) . therefore...it's a big playing field...(but if youmakeyour own, and it's good, then bravo!) but what we DO know is, wheat is not a crop that one should partake of these days, not if one has the choice, unless YOU KNOW it's organic...Sad but true.
I think "gluten" is not the huge issue it appears, but it's the genetic tampering, and the weird insertion of pesticides within the genes of a crop that most people consume daily...so, hmm. can you say "conspiracy of disease? ( and captive, global consumerism)
And what does that beget? An orderly populace--orderly by "virtue" of being drugged, scared and DNA-rearranged.
But of course there are levels and levels of 'goodness'. (of orzo) But for the most part it's ALL GMO'd these days, ain't it? ( and that's a whole 'nother subject). Unless you are the one making it from whole grain, I'd say, eat at your own peril. And not too often. But why at all?
Interesting/valuable (?) question though, might be: do you LIKE cinnamon?
Sometimes we smell things with food that alert us to its non-natural state. or maybe, we can be getting a message about soemthing missing, or being tampered with...
For instance, if my pasta smelled like cinnamon hearts, say, (that candy) I would maybe throw it out.
I wouldn't put it past pasta makers to imbue their product with what has been termed THE feel-good smell for America--esp. males.
something to consider,maybe... cinnamon. cinnamon buns being all the rage...( and invoking "mother" and nurturing, etc. as far as smell goes, in test.) Isn't it ALL about "Food Science", these days? (shudder) or agritech/pestitech

Make of all this what you will. Edit: Consider also, that cinnamon is a great 'healer' for pre-diabetis, and other blood sugar issues--etc. Look it up, and consider/reflect. So, maybe the pasta makers are adding the cinnamon to the pasta to head the disease off at the pass... hmm? and to keep making money...
