I find starting on wtaer easier then juice as it prevents acid refluxes and kills the hunger quicker!
starting on small amounts of food or one meal aday isnt a bad idea, but should not be done for a prolonged period prefast, you dont want your body sensing a starvation period even before the fast has began!
Eating a fatty meal may be good to kick off your fat burning metabolism prefast, making your body seek fat to fill its calorie needs before full ketosis has kicked in, allowing for maximum muscle preservation as possible
