I think quark is a lot like my favourite homemade cheese, when I'm craving that) which is pressed yogurt

- I don't like Goat's milk - that you just hang in a cheesecloth over the kitchen faucet (or from a chopstick over a bowl to catch the whey.) To that, when it's dryish, I like lots of green onions, and cracked pepper--a bit of Sea Salt . After the flavours meld for a day or more, it's heavenly. serve with a drizzle of olive oil.

An alternative, for people who can handle it, is pressed cottage cheese. Add the onions and pepper and let the favlours develop. hmmm, this is probably really good for people who are taking the Budwig cottage cheese flax oil gloop. (subbing flax oil)
