That Quackwatch guy is barely convinced that the Moon revolves around the Earth. Not only that, he makes an error out of ignorance in his very first sentence:

"Candida albicans (sometimes referred to as monilia) is a fungus normally present on the skin and in the mouth, intestinal tract, and vagina."

"Fungus normally present" is a contradiction, and tells us he's clueless. In its normal state, candida is a yeast. If it's in its fungal form that means it has turned pathogenic. (It's dimorphic, in fact polymorphic.) To get it to turn hyphal all you have to do is feed it and raise the pH of its environment (which can be accomplished by killing good gut bacteria w/ Antibiotics ) and then the fun begins.

Regarding research, you might be interested in the Candida Fact Sheet, especially the footnotes/documentation. The text at the top is persuasive and makes a powerful case if you can ignore all the superscripts, and fix a few errors. (The sentence that begins "may appear following" is missing its first half, which is at the end of that paragraph ("Senet states...")
