I've never used a funnel but there is no reason why you can't, you just need to make sure the tip will fit into the bottles you're using. There would probably be less drips if you use a funnel but I bought a turkey baster that doesn't drip that works just fine for me.
I ordered a few of the medium bags and a few of the large bags and I've used both, I wanted to have both just in case and I've used both. No, there is no reason when you're just pressing one or two tinctures you'd have to have the large, the medium would be fine.
A little tip for you about the 1/2 gallon canning jars. If you've looked online for them you'll see the prices are high for canning jars which is because of the shipping costs. Where I live I couldn't find any store that stocked 1/2 gallon jars so I went to a little hometown hardware store that sold canning jars and asked them to order the 1/2 gallon jars for me. They were pretty cheap and took only 3 days to get them. I don't know if you've got locally owned mom and pop hardware stores where you live but that would be you're best bet in finding them the cheapest.
