Pasteurization kills the vital enzymes, but does not kill "chemicals"...so the malic acid survives the pasteurization (as do the pesticides).
One obtains virtually no nutritional support from pasteurized juice, as vitamins do survive the pasteurization (in their molecular structure only), but without enzymes, the vitamins are not complete.
Pasteurized milk is a good case in point. The calcium in milk (when the milk is raw) in an excellent source of calcium. But once pasteurized and consumed, the body needs the enzymes that were killed in order to process the calcium. So, the the "live calcium enzymes" that the body needs, are pulled from stores in your body (teeth and bones)...so drinking pasteurized milk actually causes your body to LOSE it's calcium stores. And yep, raw milk is illegal in Iowa, I can't even buy it if I want it.
