I've been experimenting (two weeks now) avoiding gluten (your list is high in glutin) From what I've read gluten can inhibit absorption of nutrients in the small intestine. My problem is not being able to keep weight on, I'm 72 inches and weigh 165 when I should weigh 175. During times of food scarcity I would be hesitant to consume anything that inhibited absorption of nutrients. Not everyone is gluten intolerant but from what I read 80% of people are better off without it as humans aren't designed to digest this stuff.
