Another interesting fact: Since mammals synthesize a small quantity of Vit K2 forms from vitamin K1, then eating lots of green vegetables should provide substrate for some quantity of K2 conversion. However, work by Schurgers et al have shown that K1 absorption is poor, no more than 10%, but increases significantly when vegetables are eaten in the presence of oils. (Thus arguing that oils are meant to be part of the human diet. Does your olive oil or oil-based salad dressing represent fulfillment of some subconscious biologic imperative?)

I wonder what effect culturing these greens (and other wild "weeds") would have--in some parts of the world they ferment densely packed greens, adding nothing; these are surely a powerhouse of benefits, but I'm afraid we won't see many studies on cultured foods--there's no (big)money in it. And too much potential (realtively)effortless health.


But, about the cheese...
"fermented cheese" they say. What about organic cheddars?

Makes me curious about cultured nut cheeses, using nettle rennet. There's gotta be a future in it. Just because we discover things the body does, and give everything a name and sub-name, doesn't mean whatever it is we need isn't already easily available, given some natural means. Like a good plate of stewed greens for example,with good oil, and some fine vinegar.
