Fat is the cause of insulin resistance


I disagree with your assessment that carbs are the cause of insulin resistance. Many nutritionist and doctors, say like Dr John McDougall, Dr Joel Fuhrman, recommend eating a low fat (10% or less) vegan diet to heal diabetes. A high fat diet will lead to insulin resistance.

Fats take much more energy and time in the body to digest than carbohydrates found in fresh fruit. When fats are heated, they become rancid and carcinogenic.

Diabetics who eat a low carb high fat diet are in danger of getting ketoacidosis, an acidic condition of the body cause by the high fat low carb nature of the diet.

People who eat high fat also are often getting too much protein if the fat is coming from animal products. Too much protein can lead to further acidification of the body, as well has health issues with the kidneys.
