HV--the behaviour of cheese in the presence of Turmeric and tomato

I'm curious about this-- and thought you would be, as well--considering the opals, the herbs, the heart, etc...I'm sure -in my gut-- that it has a place in "saving the world"
(quotes notwithstanding)

I made some "grilled cheese sandwhiches", with a lovely millet bread, and with organic cheese, organic (I think) tomato, and lime pickle I made, heavy on the turmeric.

I put these sandwhiches in the oven to keep warm, after cooking in a cast-iron frying pan, and after being warm (200)for a half hour, I was surprised to find the cheese had returned to its pre-melted status--crawling,in essence, back to its small pieces.

I'm sure this has significance--and I hope -in my deepest heart- it serves the good. (I pray this isn't "proof"
of the new GMO's rennet that almost all (US) cheese is said to contain.--it seems that it could be--Want to sort this out, HV?)

thanks
C
