Jase, here's my two, red cents. I just came off an 11 day waterfast(lost about 20ish pounds). I was also working around food in a physically demanding job and the on that 11th day, I got up too quick and almost fainted. I had to stop there, because the last thing I needed was to fall into a fryer or on a grill or something.
Same for you man, maybe you're energy reserves will last you better and longer if you are obese as you say, but I can't see 60 days as a practical waterfast for anyone in any kind of physical work. I had intended to do 21 days max, and could only muster half that before my strength started giving out and dizziness kicked in.
I would rethink if I were you, my friend, simply enough for your safety and that of your co-workers. I don't mean simply drop off your fast, but I would recommend you go as long as safety and prudence permit, then take your time refeeding and do so prudently. During my current refeeding, I continue to lose bodyfat%, though some weight has returned and I will probably adhere to a modified better, primarily vegetarian diet because I feel good and enjoy not dragging everywhere.
If you do the same after safely concluding a waterfast and keep alcohol low, then simply running around hot ovens 40 hours a week should keep melting the weight off safely over time, and also allow your skin the chance to keep up with the weight loss and slowly regain elasticity, so that when you do attain fitness, you won't look like you just had lipo.
