And if this were the case, (the low hcl...) then a person would likely feel an aversion to fruit, right? thinking that it's "too sweet"?

Not necessarily. What if the person is serotonin deficient and they are craving the sweets as a means of raising serotonin?

when you say "might need an acid" for awhile, when would a person take acv for example?

Yes, that will work.

Someone who's eaten a lot of meat and cheese (heavy protein)
would be using different digestive enzymes, and would have to adjust, yes?

If you are referring to long term diets then yes. The body does not take kindly to sudden shifts from a strict diet to another type of diet. So if a person has been on a vegetarian diet for years they should not suddenly start eating a lot of meat. Meat should gradually be introduced back in to the diet. Same with heavy protein and fat  eaters over many years would gradually introduce carbohydrates in to the diet.
