I'm wondering how much "celiac disease" is a reaction to bio-engineered forms of grain, and all of that...(Not saying it doesn't exist mind you; it's just that names alone don't tell the whole story.

Has anyone so 'diagnosed' been able to reverse damage to the villi at some point, (perhaps through systematic cleansing and going gluten-free for a period of time), thus reestablishing the body's ability to absorb nutrients--and perhaps even to eat gluten with no further problem? (non-gm'd kinds, that is)
