 First of all I couldn't find any frozen (whole) fruits, and only some cut up mixed bags of vegetables, some where stuck together though, so I doubt they were flash frozen, so where are the frozen whole fruits at if not walmart or sams club?

When they stick together like that this means that they have been defrosted either fully or partially before being frozen again. Try  to find packs that the fruits and vegetables are all loose in the package so you know that they have remained frozen.

I want the flash frozen ones for the 'picked ripe' thing, although on other forums they say all frozen produce is blanched before packaging, therefore destroying a significant amount of the nutrients! Is this true?

The blanching is normally done to help remove skins or to destroy enzymes that can affect the quality. Some nutrition will be lost. But I don't think that all fruits and vegetables are blanched.

Also, assuming I can find the stuff, is it safe from fungal infections, etc in the freezer, will using hydrogen peroxide soaks on the produce help this? do they wash the stuff before packaging?

They should be rinsed, but the water is not always clean. A little peroxide rinse would not be a bad idea.
