Yes, that's a good idea. I had considered enzymes with regards fermented vegetables, but concluded like yourself, that this probably wouldn't work. But for kefer it just might.
I have been making kefir with bacterial fermentation starter, which doesn't contain yeast. However I can't rule out the possibility of yeasts getting in through other means.
Today I am thinking about giving up the whole idea of fermented foods. I think they are great if you aren't allergic to yeast, but I suspect that yeast fermentation is at least as important as the bacteria contained in the fermented foods, in terms of fighting Candida. Most people talk about the benefits of all the live bacteria in fermented foods, but perhaps it is the good yeasts that are actually most beneficial. Perhaps it is also the yeast in Threelac that makes it work so well. After all, Sachromyces Boullardi is perhaps the most effective anti-Candida probiotic. Maybe it's no coincidence it's a yeast.
Since I'm allergic to yeast I'm thinking I am perhaps better off leaving fermented foods alone until I reduce my Candidiasis sufficiently. I know for a fact that my yeast allergy got worse after I took
Antibiotics last year. This suggests my yeast allergy is related to my level of yeast infection and/or leaky bowel.
