 I'm aware that the possible reasons are really many, I won't discount any of them even if I found out that I'm actually celiac.

There are other symptoms related to celiac disease, my bowels have not been doing too well these last years. I thought that, as I often travel in 3rd world countries, I might have picked something. The stools are often loose and the smell is quite foul.

This can also be overgrowth of pathogens in the intestines due to lack of beneficial flora as well. Prebiotics (fibers) have been shown to help reduce foul smelling stools and can help with bulking of the stool.

I have problems with joints and feet

fatigue

food craving

dry skin on the wings of the nose, so much sometimes that it flakes

muscle cramping

Have you tried an acidified magnesium (malate, citrate) to relax the muscles? Do not take it with calcium since it works by displacing muscle contracting calcium.

sight problems

hypothyroidism (average basal temperature is 36.4 degrees)

and as I said after eating wheat I feel bloated and swollen

Your symptoms are consistent with a number of things and you likely have more than one issue going on.

As I'm mainly vegetarian, not really by choice, I just tend to dislike the taste and smell of meat and fish, I happen to eat plenty of grains, and only sometimes eggs or tofu, lately as I was alone I got a bit lazy, so I would always make rice noodles with vegetables because they're faster to make, and suddenly all these symptoms have regressed, and the craving too, like it feels I'm again the person I used to be.

If you can find some yucca root I also recommend this. Yucca root will help build up the flora and the adrenals as well as reduce intestinal inflammation and increase nutrient absorption.


Acne? no
Increased facial hair? no
Mood changes? not particularly, or I've always been moody :)

That pretty much rules out PCOS. So we are narrowing things down.


Fatigue? yes
Depression? yes, but considered some problems I had to face, not really Increased stress? the first 2 years since birth of my son I didn't sleep enough, then I continued with some erratic insomnia, now sleep is ok

Fatigue can be from a number of things including adrenal or thyroid dysfunction.


Changes in medications? no meds
Increased urination? no, and the hypothesis of diabetes is ruled out by the fact that I don't feel any difference if I eat sugar, besides rice is high G.I. so I shouldn't feel so good when I eat it

Insulin resistance can still be a possibility. You can take chromium to be on the safe side. It is not going to hurt anything.

I must add that also in the past, one of my best periods healthwise was when I fixated on eating a combination of brown, red and wild rice leaving alone any pasta or bread, I was into an italian adaptation of macrobiotics. Another was when I lived in Thailand. And again when I was in San Francisco, as we always ate at a nepalese restaurant. Instead low-carb isn't really too good for me, I feel the proteins overload my system.

Proteins are much harder to digest. I don't care for high protein either. Especially when I used to race. I lived on high carbs because protein would totally bottom out my energy levels.

edit: I wanted to add, I don't know if it has any meaning, anyway that the overweight is mainly on the belly, which is totally unusual for me, I've always had the tendency like many other women to put the weight on the hips and legs mainly.

Cortisol can do this, which is elevated by stress. Again I recommend focusing on strengthening your adrenals.
