what is the story on "ultrafiltered milk"?

my partner bought some "organic" yogurt with this listed, and it just strikes me the wrong way. I seem to recall hearing about it...but it's hazy.

Wiki only mentions lowered transportation costs, and easier cheesemaking, but it would seem $$ are promoting this, and assuaging consumers' concerns about "purity"--a distraction surely, to keep them from looking at the bigger picture(s)
