Candida can feed on blood sugar, if it doesnt how it will survive on genitals?
The most important thing is the Glycemic Index of this carbs. Diabetics have A LOT of problems with Candida because of this (you can google about this), if they dont do a good control of their glucose levels, candida can overgrowth very quickly. So if you eat high GI carbs, you are giving candida more chances to feed (takes "a little" to the body to produce and secrete insulin to reduce the glucose level if you eat some carb with high GI)

So eating fats or protein and low GI carbs is the same at the end... they are slowly transform or procesed/absorved without causing a rise in glucose levels that can allow candida to eat a lot and overgrowth.

So, evade as much as possible high GI carbs (maybe completely), and dont go crazy with low or medium. There is no more secret on this. If you still have candida problems then probably there is another problem not diet related at all.
Dr. Atkins has done a lot of research on high GI carbs and obesity and also a little research on candida overgrowth.
Also note that sometimes the GI of a food changes depending on how you cook it, or even other things you eat at same time (fiber tends to lower the GI of a food).
