I am going to make some Cayenne tincture and had some questions about the Habaneros too.  I ended up buying some from a small local Mexican food store.  They sell mostly to the Spanish population in my area, they have things that other stores don't.  He orders the Habaneros from a supplier in a big city and can't tell me where they are originally from so I don't really know if I should even use them even though they are fresh.  So Uny could you let me know what you think about this?  I mean should I go ahead and use them even if maybe they came from Mexico or should I just leave them out of the tincture?

Anyway Momobaba, here is what Uny said to me regarding African Bird Peppers when I asked about making tincture, until she can answer you.

"Cayenne #1 is made from 95% fresh/raw Habaneros and 5% 'powder blend' (that blend is 3/4 ground African Bird Peppers -from M/R- and 1/4 Habanero powder -from Starwest Botanicals. You're on your own for finding organic, raw habaneros :(  I grow some, and 'scramble' every year to find a source.  We make several one gallon jars at a time, like this:  Fill the Vitamix container with fresh Habaneros, adding enough 100 proof vodka to make an "applesauce consistency", then fill a gallon jar with that 'slurry'.  NOTE! the fumes are VOLATILE...just taking the lid off the Vitamix can cause intense coughing from 5-10 feet.  After it settles/separates, we may need to add a bit more alcohol (or pepper slurry).  The jars end up looking like they're 3/4 pepper slurry and 1/4 alcohol floating on the top.  We then add 1/2 cup of the dried pepper blend to each jar...and let them tincture a few months - shaking them 2x daily. 

You can make a very hot, very effective tincture from dried African Bird Peppers (from M/R) and 100 proof vodka.  It WILL be hotter (as the Heat Units in peppers increase as they dry), but even though it's technically 'hotter' it's not quite as effective as the one made with raw peppers.  STILL, it'll be hotter and more effective than ANYTHING you can buy commercially.  Here's Dr. Schulzes "cayenne tincture method" - and this works for virtually every tincture (if you don't have fresh, use dried)."

Good luck with your tincture.  I've got some of Uny's so I can compare mine with hers but I'm waiting on the African Bird Peppers so I'll have to wait to make mine.  Also I've got to do some research into the full moon aspect.  I don't do well with 'old wives tales' and thats what it sounds like to me LOL.  But of course since Uny only makes them when its full moon there must be something to it or I would never even research it.  My little grandmother used to make Divinity candy but she was very adamant about it not being a cloudy day because the Divinity 'wouldn't do right.'  I even had a friend tell me that I couldn't can Sauerkraut if I was on my period, which just sounds crazy to me ha ha but everyone believes differently.
