Ah, that's good. I used to catch trout from the river and I thought he did. I just found out they came from this reservoir http://bit.ly/9huIx - so I'll keep eating those then. Thanks for that info :)
By the way I tried my hand at filleting and I was not very good. I found the best way was to gut the fish and cook it whole, then the bones are removed easily. You get more meat from the dish that way too.
