Nutritarian Progression with the Vitamix


Greetings to all :).

Just wanted to provide a progress report on something that i find somewhat interesting. When i last tried raw Kale/Collard greens or their juices (a few years back), i was horrified. It made such a strong impression that i didn't even wish to try them this time around (except for a stint of mixing them with fruit in the form of "green smoothies" which i discontinued believing it was a bad combination for me).

Somehow, however, i came to a place where i tried these juices again and to my delight i found them to be quite acceptable to my palate. I later tried the entire raw leaves pulverized in the vitamix and again found the taste in smoothie form to be acceptable. Since then i have done the same with Asparagas and Broccoli and feel fairly confident that i will be able to do it with almost any vegetable i wish (including bok choy and others), having already done it with lettuces, spinach, carrots, celery, red bell peppers and tomatos, foods which i actually enjoy. (The only vegetable i have tried in raw smoothie form so far that i didn't like was italian squash.)

It is quite a pleasing (and actually convenient) development to now be able to have these exceedingly nutrient dense foods throughout the day in their raw form instead of having to cook them into a broth or a pureed soup. With this revision, i have been able to transition into about 75% raw by volume :).
