I used to have to clear my throat constantly before I got the candida under control. When the body is dealing with many immune respones, sometimes more mucus is produced than can be removed. To me it sounds like you are having an abundance of mucus production, which is actually a good thing. It signifies that your body's immune responses are still working and trying to move out toxins, pathogens, and any other little nasties.
My suggestion would be to avoid mucus forming foods (i.e., dairy, wheat, eggs, nuts, etc.). See if this helps. Also, look into Ayurvedic recipes that contain lots of spices. These spices will get the lymph system working in overtime and help the body clear the mucus out faster. I would also try citrus fruits like grapefruit, lemon (lemon water is great!), and maybe oranges. And obviously drink plenty of water, which is the most important of all.
As a side note, I also recommend the hydrogen peroxide inhalation method which may help your overall condition.

PS Dairy gets a bad rap because most of us drink pasteurized milk. Raw milk, the way it was meant to be consumed, does not cause mucus issues in my experience. Raw milk is very very VERY good for the body. =-)
