experienced kombucha brewers?
can anyone advise me on this: I have a 5 gallon glass jug (the water kind with the narrow neck.) I'm wondering how well this would work to brew kombucha. I guess my concern would be that not enough air reaches the brew? but even this I am uncertain about. normally I use either sun tea jars covered with cotton cloth or coffee filters, or a straight-sided jar with about an eight
inch mouth--also covered in cloth.
since i get good results with organic green and white tea and only a small amount of black, and use evaporated cane juice (sugar) I don't really want to spend the money on all that if the vessel is very likely to be the wrong sort.
any seasoned thoughts?

PS--just thought I'd share a note from recent experience. It seems to me that the white basket type coffee filters are not as good as ironed (sanitized) white cotton. Maybe the bealch? I had two batches 'fail', having developed sort of ugly-looking scobys...and I came to the conclusion natural is better. not sure if the filters actually had a negative effect--could have been the weather, or the fact that my starter tea wasn't enough...
prior to this however, I had a batch that was so good it was like a fine white wine, a chardonnay or a cross between a cidar and a champagne--but better! so good!!!! I hope those who haven't tried to make any kombucha will give it a go. I got my first scoby from ebay, and it was a lovely thick, inexpensive creamy white.
