Now to respond to the rest of your post.
"Why is it that everyone loves the number 7?"
For me, it reminds me of God, who chose to do a lot of things in 7's and of my yearning to be aligned with Him. For others, it might be that it is the most common number to come up in a dice roll :).

For sure spiritual renewal is a big part of it and for sure it is an amazingly powerful means by which to encounter God on a deeper level... to experience the supernatural so much more keenly. By denying our "flesh" and thus weakening it, we are brought into a greater place of reliance on God and and on the spirit aspect of our nature.
I am also fascinated with the health benefits fasting provides and the ability of a fast to help us to start fresh, cleansed, renewed and ready to rebuild with excellence.

Throughout the Bible, whenever anybody really wanted to get God's attention, and/or to connect with Him on the deepest possible level, they fasted (and prayed). After Jesus’ 40-day fast, the scripture says He "returned in the power of the Spirit". His earthly ministry did not begin until the completion of this fast. Moses fasted for 40 days immediately preceding the Ten Commandments being given to him. In these two examples and in others, Fasting has been the catylist for something truly great to happen next.
