All done and baking now. I actually prefer your way, because it sounds more natural so I will try that next time. This time I baked in foil. Next time I will bake the fish whole. This time it was a rainbow trout

...just under 2 pounds. Last time it was a brown trout, and a little smaller. Yes there were eggs, shame about that but at least it's better that people like me know what's involved rather than buy them in pre-packed plastic, as we do here. Humankind needs to be more in touch with the envronment, not this artificial cr@p.
It's also a shame about pollution, deliberate and accidental. I did check first and found trout were the lowest polluted fish. Oddly enough this came out on Fuhrman's page about pregnant women (see chart lower down). I guess this is a river fish so it doesn't get as problems as seawater fish, and I know this river pretty well (more a case of "better the devil you know").
I know what goes on in Vietnam as I have a few friends that ran a diving business out there, and their natural habitat is a mess too. All the coral destroyed. I also saw in the recent film "Age of Stupid" that they wash fish in Nigeria with "OMO" washing powder to remove the oil pollution. Terrible huh? In Greece they used to dynamite fish, I know this because I was woken up at 7am while sleeping on the beach at Halkidiki, though that was long before Greece joined the EU though.
By the way Age of Stupid is a good film. Points out that we are all like climbers on a mountain, roped together, as regards the fate of this planet. Sorry, digressing a bit there.
For me I think it's best to stick with veg, but if it's been caught let's not waste it. Taste time... oh wow!!! Yeah this is good, really good :)
I won't show you the final pics because I am not exactly proud of my filleting work, ha ha! But it doesn't matter, I wanted dinner, not a work of art. I'll bake it whole next time, sounds easier.
