A neighbour caught and gave me a 2 pound trout which has been frozen from fresh until today, now it is thawing out. I may post a few pics.
This one was covered in slime. I googled it and found this: http://www.digitalspy.co.uk/forums/showthread.php?p=23638508
Q: "When you buy trout in the supermarket, what is that horrible slimey stuff all over it? Why is is there?..."
A: "Trout secrete a mucus. This is a protection barrier to help them fight off harmful bacteria in a river or stream. This is the slimey stuff you describe and also a sign that your trout is lovely and fresh. All you need to do is wash it off. Scientists are considering using this mucus to make medicines to fight infectious diseases."
So I figure that's OK!
I'll post some pics later. In the meantime if anyone has any preparation tips, I'd be grateful!
Unless otherwise advised, I am going to gut and fillet it like so:
