Supervised fast: What kinds of things are checked for?

Greetings,

Does anybody know the specifics of what takes place in a supervised water fast, ie: does the dr. do blood testing, urine testing or "litmus" testing for certain things?

Are they able to determine for example if certain minerals have been depleted, and if so, how is this done?

Is the dr. able to intervene short of stopping the fast (ie: supplement a depleted mineral) or is he/she there to say "you need to stop now" or "you can continue"?
