Re: About carbs & grains when can't eat meat, also avoiding poultry..
Hey there.
I do not know of this will help you, but here is the exact list that my Naturopathic doctor gave me of foods to avoid or keep:
Foods to Avoid on an Anti-Candida Diet
These include:
sugar of all kinds (eg. brown, white, syrup, molasses, honey, fructose, lactose, maltose, dextrose etc.)
ready-to-eat cereals
white flour or white flour products--cakes, cookies, pasta
corn flour
cows milk
diet drinks
alcoholic beverages
caffeinated tea or coffee
fermented or pickled foods (eg. vinegar, pickles, chutney, soy sauce)
peanuts and cashews
potato chips, pretzels
junk food
bacon, salt pork and lunch meats
cheese of all kinds
Foods to Eat Occasionally
These include: fruits in small amounts, raw seeds, dry beans and legumes, millet, white rice, buckwheat and yellow cornmeal and sweet potatoes/yams. Eggs can be eaten in moderation if tolerated.
Foods to Eat Regularly
These include:
onions and garlic
fresh vegetables (eg. onions, garlic, cabbage, broccoli, turnips, brussel sprouts, kohlrabi)
rice cakes, oat cakes, Ryvita (sesame and original only),
soy and almond or oat milks
organic butter
goat’s milk yogurt
freshly cracked nuts, seeds,
water
fruit and herb teas
cold pressed oils
brown rice and brown flours, oats (eg. for porridge)
meats (preferably chicken or lamb -- organic or free-range)
fresh fish (esp. salmon, trout, halibut).

As you can see, there are quite a few things on here to eat in general...and many grains that I didn't expect to see are listed here as ok.
When it comes to eating nuts I have been told to avoid cashews and peanuts always, and also to avoid nuts that are already cracked because they may have mold on them.
To make my diet cheap I rotate beans(organic ones with no
citric acid or
preservatives )eggs, chicken and fish and usually add these to a stir fry. I don't know what your tolerance is to egg or bean but they are occasional cheap substitutes for fish. I also eat almomd butter on organic brown rice cakes every day and its quite filling.
As for the coffee, well there are mixed reviews on it. I am prone to migraines so I did not want to give it up entirely. I am down to 1 cup per day and my Naturopath says that I am ok doing that because its not that it actually feeds yeast, but that the oils in the coffee are very inflammatory and may not be ideal at a time when you are trying to boost your immune system. From what I have read about decaf coffee, I think it may be worse than regular coffee because the process used to remove the coffee is uses a lot of chemicals.
I hope this helps
