Its clear that you know whats going on.
I recommend putting some focus on the source of any problems. - the diet.
That should be senior, because without it health problems will persist.
A fast will work on the health problems but any benefits would only be temporary without a clean up of the diet.
Since your in a position in life where you have to "sneak in" a fast, you may want to consider sticking to 24 or 36 hour fasts.
Many people do fasts of these lengths on a weekly basis with great success.
As for the question of if you have undone the benefits of the 36 hrs. - probably not.
