Dr. Christopher recommends soaking the grains because this neutralizes the Phytic Acid which binds many of the nutrients, as well as raises the pH, which makes them more easy to digest and more assimilable. He suggests not heating them over the temperature at which the enzymes are destroyed, since the enzymes are so valuable to the body.
He also says they are indeed a "warming" food, as are potatoes, and that they help in winter time.
