greater healing normally arises thru rest, physically, mentally, and spiritually, and which is why the pioneers of fasting and Natural Hygiene referred to the fast as "the rest cure".
Any excessive movement of your knee can only add in delaying this healing, although some activity is advised to maintain blood flow.
Have you ever considered why a broken bone is placed in a plaster cast? or a broken arm-bone is placed in a sling?...........by preventing movement to encourage the maximum amount of healing.
However, exercise has its place within healing, and where some minimal and gentle exercise will be beneficial in your own case, of that I am sure, but I would allow the self-healing powers of your body to accomplish the most healing before undertaking more strenuous exercises for your joints.
You might like to consider (post-fast) supplementing your diet with those nutrients that are targeted for joint health, such as Glucosamine with Chondroitin and MSM which builds cartilage/tendons and lubricating materials such as synovial fluids, which only come from Nutritional therapy or Orthomolecular therapy.
