A 5 year study was done on oats for celiacs- the oats were ok, the problem was the cross-contamination with other glutens.

The problem with any grain products, is the mold the USDA/FDA know are present from the way they are stored. They allow a percentage of it to be present in the foods we eat. Mycotoxins. Ingesting fungi spores through foods/alcohol, are the main way of getting them (and Antibiotics ) Most alcohols are made from grains.
