I agree, tons of wonderful advice. I had early onset dementia and the doctor told me it was either Parkinson or Alzheimers and I went on a strict diet. I am well now. Here is what I suggest.
Have a fruit smoothie for breakfast
Have a budwig for snack (drained yogurt and flax with one fruit)
For Lunch you have your one cooked meal. today I had a big salad topped with avocado salad and 1 cup of red beans. Or you could have some steamed veggies with some brown rice (basmatti is acceptable)
snack - celery and organic peanut butter or apple and cheese
For supper, green smoothie
Snack kousimine budwig detox - drained yogurt, flax seeds ground, juice of 1/2 lemon, 2 t. of granola and one to two fruits.

Eat all the fresh fruits and veggies you want. I eat a small piece of turkey, once every ten days. Absolutely no fish or red meats. No processed meats. 2 egg yolks a week and all the white you want. No hydrogenated oils and fresh butter only.
Eliminate meat and you don't have an organic problem.
Husband needs to be well so he can think well, so work on his wellness first. Frugal husband, no problem. You can do the Pakistani Lunch with lentils that cost around fifty cents a serving. Cut the potaotes and substitute whole wheat bread. Better to make your own. I have many recipes, just ask and I will send gladly.
Most organic is extremely expensive, look for a farmers market and buy local produce. Look do the best you can and don't fret about the rest. If you have fifty dollars a wk, you cannot buy much organic but start small and buy what you can. Switch to food herbs and take tumeric for the parkinsons and ginger. Have a few bucks go for the grape seeds. Depressed take fresh ginger and grind in some black seeds. Great relaxer. Can't sleep take anise seeds and boil with some mint. Good health on a budget is easy. Just go for the local grown stuff and buy what your budget allows. go for fresh salads with olive oil and lemon dressings. I am eating popcorn now, easy and cheap. Cut out all milk and sugar. The two highest things on the list of cancers other than red meats and processed. What's left, your budget allows for. Want beans go for white or red only. I am telling you what worked for me, maybe not everyone agrees but I am well now and this is what I did.
